This recipe works well with any greens – Swiss chard, kale, spinach, etc.
Julie's Greens
Makes 4 servings

2 bunches greens, rinsed well
- 1/2 tsp. canola oil
- 1 clove garlic, minced
- 1/4 tsp. red pepper flakes (optional)
- 1-1/2 tsp. soy sauce
- 1-1/2 tsp. white wine vinegar
Remove tough part of stems and chop the greens in 1/2 inch strips. In a large pan with a cover, saute the garlic in the oil for 1 minute or so. Add the damp chopped greens and red pepper flakes and stir. Cover and steam for 1 minute (or until done to taste). Add the soy sauce and vinegar and serve.
You may omit the oil if you like, but the very small amount of oil adds a lot to the recipe. This recipe works well with any greens – Swiss chard, spinach, etc.
